- 1 cup of cooked black rice
- 1 can (425g) of Chickpeas
- 2 Tablespoons of Superb Seasoning Mix
- 1 Tablespoon of Extra Virgin Olive Oil (EVOO)
- 1/2 cup of Toasted almonds
- 1 cup of Shallots (chopped)
- 1/2 cup of Mint (chopped)
- 1 cup of Parsley (chopped)
- 1 cup of Tomatoes (diced)
- 1 cup of Cucumber (diced)
MethodStep 1 - Rice: Let's start by cooking the black rice. Rinse it thoroughly and drain. Soaking the rice is optional but can reduce the cooking time.
