- 1 cup of cooked black rice
- 1 can (425g) of Chickpeas
- 2 Tablespoons of Superb Seasoning Mix
- 1 Tablespoon of Extra Virgin Olive Oil (EVOO)
- 1/2 cup of Toasted almonds
- 1 cup of Shallots (chopped)
- 1/2 cup of Mint (chopped)
- 1 cup of Parsley (chopped)
- 1 cup of Tomatoes (diced)
- 1 cup of Cucumber (diced)
Method
Step 1 - Rice: Let's start by cooking the black rice. Rinse it thoroughly and drain. Soaking the rice is optional but can reduce the cooking time. If you decide to soak, allow it to rest for 15 minutes to 2 hours. In a pot, combine 3 cups of water with one cup of rice. Bring it to a boil, then reduce the heat to a low simmer. Cook for 40-45 minutes (or 20-30 minutes if soaked). Drain any excess liquid and set the rice aside. Step 2 - Chickpeas: Rinse the chickpeas under running water in a colander, pat them dry, and place them in a bowl. Add EVOO and Superb Seasoning Mix, tossing well to ensure even coating. Cook the chickpeas using an air fryer or oven. For air frying, set the temperature to 160 degrees and cook for 20 minutes. If using an oven, preheat it to 190 degrees fan-forced, place the chickpeas on a lined baking tray, and roast for 25 minutes. Shake them on the tray and continue roasting for another 20-25 minutes until they turn golden brown. Step 3 - Almonds: Lightly toast the almonds in a frypan until they release their aroma and turn slightly golden. Set them aside to cool, then roughly chop. Step 4 - Dressing: Whisk all the dressing ingredients together to create a tangy and flavorful dressing. Step 5 - Salad: In a large mixing bowl, combine the chopped shallots, mint, parsley, diced tomatoes, and cucumber. Mix them thoroughly.
