Serves: 8 | Prep Time: 10 minutes | Cook Time: 35-40 minutes Ingredients:
  • 3 cups of OMG Porridge
  • 3 cups of Almond milk
  • 1/2 cup of Seed Cycle
  • 3/4 cup of water
  • 1 vanilla pod or 1 teaspoon of vanilla extract
  • 1 cup of grated carrot (approximately 2-3 carrots)
  • 1/4 cup of Rapadura sugar
  • 1/2 cup of raisins (1/4 cup in the batter and 1/4 cup on top)
  • 1 cup of pecans (or nuts of your choice), roughly chopped (half in the batter and half on top)
Toppings:
  • Coconut yoghurt
  • Greek yoghurt
  • Nut butter
  • Honey
Method: Step 1: Preheat and Prepare  Preheat your oven to 180 degrees Celsius. Line a 9 x 13" baking pan with baking paper, ensuring that it covers the entire pan. Step 2: Mix and Pour In a large mixing bowl, combine the OMG Porridge, almond milk, seed cycle, water, vanilla, grated carrot, Rapadura sugar, 1/4 cup of raisins, and 1/2 cup of pecans. Stir well to ensure all the ingredients are evenly incorporated. Pour the mixture into the prepared baking pan, smoothing it over to create an even layer. Step 3: Add Toppings Sprinkle the remaining 1/4 cup of raisins and the remaining 1/2 cup of chopped pecans on top of the batter. Get creative with your toppings and use whatever nuts or dried fruits you have in your pantry. Step 4: Bake Place the baking pan in the preheated oven and bake for 35-40 minutes, or until the top turns a lovely golden brown.
