Sweet Chick Bowl | 6 Ingredient Dishes Series by Seed + Oat

Today's recipe is the "Sweet Chick Bowl," a delicious and nutritious dish perfect for any meal. Ingredients:
- 1 cup Brown Rice
- 1 tin (425g) Chickpeas, roasted
- 2 Medium Sweet Potatoes, roasted
- 2 cups Kale, washed and cut into bite-size pieces
- 2 Avocados, half per bowl
- 1 Spanish Onion, cut into 8ths and roasted or raw
Seasoning:

Remedy Superb Seasoning Mix:
- 2 x Tbsp with the Sweet Potato
- 2 x Tbsp with the Chickpeas
Dressing:
- 1/4 cup Tahini, unhulled Tahini will have a toasted flavor
- 1 Tbsp Honey
- Juice of 1/2 a lemon
- 2-3 Tbsp Hot water to thin the dressing
- 1/4 cup Parsley, finely chopped
- Pinch of Salt & Pepper
Special Ingredient:
- 4 scoops Seed Cycle, either phase 1 or 2
Instructions:

Cook the Brown Rice:
- Follow the package instructions to cook 1 cup of brown rice. Once cooked, set aside.

Roast the Chickpeas, Sweet Potatoes, and Spanish Onion:
- Preheat your oven to 200°C (390°F).
- Drain and rinse the chickpeas, then spread them on a baking sheet.
- Peel and cube the sweet potatoes, and cut the Spanish onion into eighths. Spread them on another baking sheet.
- Season the sweet potatoes with 2 tablespoons of Remedy Superb Seasoning Mix.
- Season the chickpeas with 2 tablespoons of Remedy Superb Seasoning Mix.
- Roast in the oven for about 20-25 minutes, or until the sweet potatoes are tender and the chickpeas are crispy. If you prefer the onion raw, skip roasting it.

Prep the Kale and Avocados:
- Wash and cut the kale into bite-size pieces.
- Slice the avocados in half and remove the pits. Scoop out the flesh and set aside.

Make the Dressing:
- In a bowl, combine 1/4 cup of tahini, 1 tablespoon of honey, juice of 1/2 a lemon, and 2-3 tablespoons of hot water. Stir until smooth and creamy.
- Add a pinch of salt and pepper, and 1/4 cup of finely chopped parsley. Mix well.

Assemble the Bowl:
- In each bowl, start with a base of brown rice.
- Add a generous serving of roasted chickpeas, sweet potatoes, kale, avocado, and Spanish onion.
- Sprinkle 4 scoops of Seed Cycle (either phase 1 or 2) over the top.
- Drizzle the tahini dressing over the bowl.
