Chicken Pita Nourish Bowl Recipe
Serves: 2 Ingredients:- 4 chicken tenderloins (2 per person)
- 3/4 cup Remedy Kitchen Superb Seasoning Mix
- 1 pita bread
- 1 cos lettuce, chopped
- 1 cucumber, chopped
- 1/4 Spanish onion
- 1 scoop of Seed Cycle (either phase 1 or 2, depending on your cycle)
- 1 avocado
- 1/4 cup extra virgin olive oil (EVOO)
- 2 tablespoons balsamic vinegar
- Juice of 1/2 a lemon
- Salt and pepper to taste
- Prepare the chicken: In a medium to large-sized bowl, sprinkle the Remedy Kitchen Superb Seasoning Mix. Lay the chicken tenderloins in the bowl and toss until completely coated. Cook the chicken in an air fryer for 12 minutes at 190 degrees Celsius or pan fry until golden on each side.
- Prepare the salad: Wash the lettuce and cucumber. Chop them into bite-sized pieces and place them in a bowl or serving platter. Thinly slice the Spanish onion and sprinkle it over the salad.
- Make the dressing: Combine the extra virgin olive oil, balsamic vinegar, lemon juice, salt, and pepper in a jar. Give it a good shake to mix the flavors. Set aside.
- Toast the pita bread: Use a grill pan or sandwich press to warm the pita bread and give it a lovely charred effect. Chop it into triangles or any shape you prefer.
- Assemble the nourish bowl: Once the chicken is cooked, let it rest for a few minutes before cutting it into bite-sized pieces. Place the chicken over the salad, add the pita bread, avocado slices, and a scoop of Seed Cycle. Finish off with a drizzle of the homemade dressing.
